Banana Fritters with Butterscotch Sauce
| Ingredients: |
| | Butterscotch sauce |
| 60g | butter |
| 1/3 | cup golden syrup |
| 1/3 | cup soft brown sugar |
| ¼ cup | caster sugar |
| 2/3 cup | cream |
| ½ tsp | vanilla essence |

Batter: |
| 1 cup | self-raising flour |
| 1 | egg, beaten |
| ¾ cup | soda water |
| 20g | butter, melted |
|
To finish: |
| | Oil for deep-frying |
| 4 | firm bananas |
| | Icing sugar, for dusting |
| | Ice cream |
Make sauce first. Place butter, golden syrup, brown sugar and caster sugar in a saucepan. Stir over low heat until sugar has dissolved. Increase the heat slightly and simmer for 3-5 minutes. Remove pan from heat and stir in cream and vanilla.
For batter, place flour in a bowl and make a well in the centre. Whisk in egg and soda water until smooth. Whisk in the melted butter. Fill a deep frying pan with oil and turn heat to high. Cut each banana into 3 pieces and, using tongs, dip pieces in the batter, turning them to coat well.
Using tongs or a slotted spoon, carefully lower a few battered banana pieces into the hot oil. (Do this in batches.) Cook for 2-3 minutes, or until batter is puffed and golden brown. Drain fritters on paper towels. Dust with icing sugar and serve with butterscotch sauce and ice cream.
